The Knights family had jetted off to sunny Menorca with tour operator First Choice to enjoy a week in the sun to celebrate their recent wedding anniversary.
Unfortunately the family were soon battling symptoms of illness instead of enjoying a fun filled break in the sun.
Miss Knights was the first of the family to fall ill with a high temperature, bowel problems and vomiting. She later began to suffer severely with headaches, pain and fever, which UK doctors suspected to be viral meningitis.
Father of one Mr Knights, a paramedic from Essex, also recalled another child visibly vomiting in the reception area of the hotel, despite resort staff claiming their illness was an isolated case.
